Liz’s Luscious Lemon Cake
4oz soft margarine
3 tbs icing sugar
6oz self-raising flour
3 tbs lemon juice
6oz caster sugar
4 tbs milk
Cream margarine and sugar together. Add eggs and flour slowly. Add finely grated lemon rind.
Add milk. Pour into greased and lined loaf tin and bake for 40–45 minutes on 175 C, (gas mark 4)
Mix sifted icing sugar and lemon juice together
As soon as cake comes out of oven, pour over lemon mix.
Leave in tin until cake is cold
